This healthy breakfast gets a boost from fresh microgreens on top of protein packed avocado toast and jammy egg.


  • 2 slices sourdough
  • 1 avocado, mashed
  • egg, soft boiled
  • salt and pepper, to taste
  • fresh lemon juice, to taste
  • microgreens, to top
  • hot sauce, to taste (optional)


  1. Toast sourdough slices
  2. Spread with mashed avocado.
  3. Top with microgreens and soft boiled egg.
  4. Season with salt and pepper to taste.
